Understanding Rice
Grain Types & Processing Forms

Long Grain Rice

Slim, elongated grains (6 mm+). Distinct, light, and fluffy upon cooking. Ideal for biryanis, pilafs, and fried rice.

Medium Grain Rice

Shorter, wider grains (4–5 mm). Tender, moist texture with gentle creaminess. Perfect for risotto, paella, and Mediterranean dishes.

Short Grain Rice

Round, plump grains (under 4 mm). Generously absorbs water, becoming soft and cohesive. Ideal for sushi and rice puddings.

Brown Rice

Minimally processed, retaining bran and germ for a nutty flavor, firmer texture, and higher fiber and vitamin content.

Raw (White) Rice

Fully milled for a versatile, quick-cooking grain that is the most widely consumed rice form globally.

Steam Rice

Partially pre-cooked through steaming before milling, helping it cook faster, retain more nutrients, and maintain a fluffy, separate structure.

Parboiled (Sella) Rice

Soaked, steamed, and dried before milling to create a firmer grain that resists overcooking and is highly popular across Africa and the Middle East.
